For a damage oriented bard you pretty much have to mix it with something to enhance the play style. 10 swords bard / 2 paladin is a very strong build. Both classes use charisma for spell casting so there is a nice overlap there. The general idea is you go in melee range use slashing flourish to hit two enemies and then smite them both.

You can't one hand crossbows period - they are two handed weapons. You can one hand hand crossbows which are different than light/heavy crossbows. Loading and ammo tags don't do anything in bg3. There is one handed HAND crossbow and two-handed LIGHT crossbow. You can dualwield first one, not the latter.
