I don't recall if one option is a better choice since you can use the notes to craft a mastery book, or use the same number of notes to craft 10 skill points. I generally went for the books since I had a lot of luck getting them in drops or loot.

Collect sap the same way as water. Read all the classes before picking one. Personally I went mechanic but you will find books to be able to craft a good amount of things without the class.
