What I do is: In Moza Pit House set Maximum Steering Angle to 900 degrees. In the Forza Horizon 5 set Steering Sensetivity to 0.0. The result: The phisical wheel rotates 900 degrees but, In the game it's only 180 degrees. E.g. I rotate phisical wheel 90 degrees to the right and in the game wheels are turned all the way to the right.

I read the online doc for what each force feedback setting does and I have figured out how to make my wheel closer to games like Assetto Corsa: -reduce center spring force to 0, it's a canned effect based on slip angle, not what the front tires are doing. -reduce dampening force to 0 if on a g29/g920/g923 etc ...
Don't get a steering wheel for forza, support is awful and it doesn't feel anything like it should. So, I got a series X, and can confirm steering sensitivity and wheel rotation settings don't exist. Default settings are ridiculously terrible to me, basically undriveable. So I spent a couple hours fiddling with it. To get steering angle to match wheel rotation, I turned on telemetry and adjusted steering outside deadspace.
